Peach Ice Cream Cookie Sandwich

Looking for something sweet and popular at The Masters Tournament? Look no further. Real peach ice cream sandwiched between homemade sugar cookies! Now you could go to the market and buy sugar cookies, but where is the fun in that? Besides, they taste better homemade!


Prep Time: 20 mins Cook Time: 10 mins Total Time: 30 mins

Yield: 2 dozen (I used a larger scoop) 4 dozen for smaller cookies

  • 2 ¾ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • ¼ teaspoon cream of tartar

  • 1 cup butter, softened

  • 1 ½ cups white sugar

  • 1 egg

  • 1 teaspoon vanilla extract

Preheat the oven to 375 degrees F

Sift the flour, baking soda, cream of tartar, and baking powder together in a small bowl.

Beat sugar and butter together in a stand mixer with the paddle attachment until smooth. A large bowl with an electric mixer works just as well. Beat in egg and vanilla.

Gradually blend in flour mixture. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.

Bake until edges are golden, 8 to 10 minutes. Cool on the baking sheets briefly before removing to a wire rack to cool completely.
