Easter is a time of renewal and fresh beginnings, marking the arrival of spring with its promise of new life and growth. This holiday holds a special place in many hearts as it symbolizes hope, resurrection, and a chance to start anew.
So, I’ve been busy canning lately. What? It’s the wrong time of the year! Yeah, yeah, I know late winter is not the time most people think of canning. However, I had things in the freezer taking up unnecessary room that were past their prime. Now they weren’t “bad” just not that great in a thawed state.

Every summer, back in my service industry days bartending and managing, we would come up with different summer cocktails. We always ended up having one drink that we would call a patio pounder.
My family is Scots, Irish, and English, pretty much in that order. With that being said, there aren’t many days, like St. Patrick’s Day, etc., that we don’t miss celebrating or acknowledging in some way. While we don’t go out to drink green beer and collect cheap plastic green trinkets, we definitely do eat!
Growing up, it seemed as if every few weeks, there was a family get-together, church pitch-in, or a rowdy card night of euchre. One of the predominant dishes Grandma would make was her famous meatballs.
